The name of the restaurant - Moment - represents the underlying idea. it has a very specific meaning: We wish to capture the “now” - in terms of raw materials, season and atmosphere. we wish to react against the idea of grand scal mass production and uniformity because every moment is momentary: It ceases to exist. This is part of nature, and we should work with it in stead of against it.

At the restaurant you can never completely repeat atmosphere, taste or feel. Dishes are replaced and will not reappear. Drinks are made in small quantities and will never be repeated. Service is down to earth, flexible and caring to allow you to experience the philosophy in practice

on this basis, we care as much about taste as we do about sustainability and vice versa. one must never be compromised for the sake of the other
