      <image:title>Philosophy - Sustainability is key in everything we do….</image:title>
      <image:caption>The restaurant is vegetable based, and ingredients are primarily harvested in our own garden and farm. Of course (!), no pesticides or similar techniques are used, and we avoid F1 hybrids so that only open pollinated plants are used in our garden. We strongly support organic and biodynamic farming – but we wish to go far beyond. We wish to turn around the ambition – to not just be satisfied with a minimal negative footprint, but instead strive for a positive footprint, e.g. by increasing biodiversity when growing food. We love to play with things and investigate what we can actually grow ourselves – reintroducing heirloom plants, cultivating wild plants you would not normally grow in a garden, and introducing new plants not normally seen in Denmark. In the kitchen, we wish to show the true potential of nature in food. We are highly oriented towards the season and the current Moment – and we “prolong” seasons, preserving the abundance of nature when it’s there. This way, our food – as well as the entire atmosphere of the restaurant – changes with the season and weather – but is equally interesting and experimenting all year. We buy a few things that we cannot grow ourselves – e.g. oranges from Italy when they are in season, while those many things we can grow – e.g. apples – we would never import. The building that houses Restaurant Moment is a demonstration building for various sustainable technologies – e.g. straw bale elements as walls, waster water recycling for growing, a smoke cleaner system for the mass oven, and several other ideas. All elements of the interior are based on the same ideology – e.g. Danish Design chairs - locally made using local wood, and a plate series created for us without glazing so that they can be composted - just to mention two examples out of numerous. Wines are natural wines, produced with organic or biodynamically grown grapes, spontaneously fermented, unmanipulated, and with zero or a minimum of sulfites. Another drinking menu contains home-made fermented drinks using various old fermentation cultures that produce less or no alcohol. We try to think of as many sustainabile practices as possible – water from tables is used for watering the edible plants that are table decoration – and so is the condensated water from the cooling system of our walk-in refrigerator. We ferment food waste to compost and make our own soil. We collect rainwater from the building in a pond in the garden, which is home to several frogs and insects - increasing biodiversity and naturally fighting slugs. In our garden, we have bees to produce honey and pollen - and to help pollinate our plants. Our menus are printed on recycled paper. And the list of examples is so much longer... Seen from the outside, we are a restaurant, serving food for foodies and all those interested in interesting flavours, relaxed, friendly and knowledgeable service in atmposhperic surroundings. Seen from the inside, we are more than a restaurant and more like a philosophy in action - working at several levels with many different methods and collaborating with partners who share our ideology. As a guest, you can be introduced to both “Behind the Scenes”. We know that we are far from perfect. But we learn something new every day, and constantly update and change what we do – hoping to contribute just a little to create a more sustainable world.</image:caption>

      <image:title>Filosofi - Bæredygtighed er grundlæggende for alt hvad vi gør….</image:title>
      <image:caption>Restauranten er grøntsagsbaseret, og ingredienserne er primært høstet i restaurantens egen mark og have. Selvfølgelig (!) er der ikke anvendt pesticider og lignende, og vi undgår F1-hybrider, hvorved der kun er frøægte planter i vores have. Vi støtter økologisk og biodynamisk dyrkning i meget høj grad, men vi ønsker at gå meget længere. Vi ønsker at ændre ambitionen – i stedet for blot at være tilfreds med et minimalt negativt aftryk på naturen, ønsker vi at tilstræbe et ”positivt aftryk” f.eks. ved at øge biodiversitet i forbindelse med dyrkning. Vi elsker at eksperimentere med hvad vi faktisk selv kan dyrke – ved at reintroducere gamle sorter, at kultivere vilde planter man normalt ikke vil dyrke i en have, og ved at introducere nye planter, der normalt ikke hører hjemme i Danmark. I køkkenet vil vi gerne vise naturens fulde gastronomiske potentiale. Vi er meget orienteret mod sæsonen og det momentane – og vi ønsker samtidig at ”forlænge” sæsoner ved at preservere naturens overflod når den er der. På denne måde er maden – såvel som atmosfæren generelt – forskellig efter sæsonen og vejret, men lige interessant og eksperimenterende året rundt. Vi køber enkelte ting, vi ikke selv kan dyrke – f.eks. appelsiner fra Italien når de er i sæson, mens de ting vi kan dyrke – f.eks. æbler – aldrig importeres. Bygningen, hvori vi bor, er en demonstrationsbygning for forskellige bæredygtige teknologier – f.eks. er væggene halmelementer (i stedet for f.eks. betonelementer), spildevand genbruges i et hygiejnisk dyrkningssystem, en røgvasker fjerne skadelige partikler fra masseovnen – og adskillige andre innovative løsninger. Alle interiørets elementer er baseret på samme ideologi – f.eks. er stolene dansk design, produceret af lokalt træ, og tallerkenserien er skabt til os uden glasering, så de kan komposteres – blot for at nævne enkelte eksempler. Vores vine er naturvine – produceret med økologisk eller biodynamisk dyrkede druer, vildgæring, uden manipulation og der er ikke tilsat svovl – eller blot et minimalt niveau. Andre drikke er selvproducerede fermenterede safter fremstillet med forskellige gæringskulturer der producerer lidt eller ingen alkohol. Vi forsøger at implementere så mange bæredygtige initiativer som muligt – vandet på bordene og selv kondensvandet fra køleskabet anvendes til at vande de spiselige planter der udgør borddekorationen. Vi fermenterer madaffald til kompost og producerer vores eget jord til haven. Vi samler regnvand fra bygningen i en lille sø i haven, der også er hjem for frøer og insekter, hvilket øger biodiversiteten og naturligt bekæmper dræbersnegle. Vi har bier i haven til at producere honning og pollen, og for at bestøve vores planter. Vores menuer er printet på genbrugspapir.. Og listen af eksempler er betydeligt længere… Set udefra er vi en restaurant der serverer mad for alle der interesserer sig for mad, interessante smage, afslappet, venlig og vidende servering i atmosfæriske omgivelser. Set indefra, er vi mere end en restaurant og snarere en filosofi i praksis. Vi arbejder på flere niveauer med mange metoder og i samarbejde med flere partnere der deler vores ideologi. Som gæst, kan man introduceres for begge dele ”Bag scenen”. Vi ved godt selv, vi er meget langt fra at være perfekte. Men vi lærer noget nyt hver dag, og vi opdaterer og ændrer hvad vi gør konstant i håbet om at kunne bidrage blot en smule til en mere bæredygtig verden.</image:caption>

Since 1980, Myanmar has lost 1 million Ha of mangrove forest, leaving only 16% - and the destruction continues. Myanmar is seriously threatened by loss of land, and at the same time, agricultural areas are flooded and made barren because of sea salt pollution.   Mangrove trees are part of securing the coast line, and at the same time, they are a very biodiverse home for many water and land living creatures. Besides, mangrove trees store great amounts of CO2 in soil  On this page, we will share pictures and information on how the project progresses.</image:caption>

Siden 1980 har Myanmar mistet 1 millioner hektar mangroveskov, hvorved der kun er 16% tilbage – og ødelæggelserne fortsætter. Myanmar er alvorligt truet af klimaforandringer og global opvarmning. Den stigende vandstand medfører tab af landområder, og samtidig oversvømmes landbrugsarealer og ubrugeliggøres af saltforurening fra havvandet.  Mangrovetræer er med til at sikre kystlinjen, og er samtidig et meget biodiverst hjem for dyrearter i vandet og på land. Herudover lagrer mangrovetræer meget store mængder CO2 i jorden. A private dining event presents the flavors and style of Restaurant Moment to your home or workplace. Our head chef Eigil will take over your kitchen so that you can entertain your guests or colleagues without thinking of anything or anybody else.  We would also love to do the drink pairing, as our restaurant manager and sommelier can select the right wines and/or fermented juices to go with your menu.  Prices for Private Dining follow our in-house prices. Do however notice that there will be a minimum charge of 10.000 DKK, and we will add a transportation fee.  Do not hesitate to contact us. Our servings change continously and reflect the Moment in expression and taste Our menu is constantly changing, following the season and the available resources. Our wines and fermented juices express natural flavors. All things we serve are based on a respect and care for the plants and animals with whom we share the planet. We have two seasons during the year that vary in a number of ways: The Garden Season (July-September Our garden season is vegetable based and created on what we can grow in our garden, our farm, and small producers supplied with what we can sustainably source from wild nature The Pantry Season  (October-June) Our pantry season is created on what we have preserved from other seasons, and what we can grow at the time of your dining experience. In the Pantry Season, you choose if you will dine with us as “vegetarian” or as “omnivore” (including sustainably sourced fish and meat). You can see prices and options right here: Please communicate as early as possible in case of allergies or special requests, so that we can be able to accomodate. This can be done directly in the booking system or to rikke@restaurantmoment.dk We can accomodate most allergies, but there can be cases where we cannot. Children dine at the restaurant on the same premises as adults. The restaurant has no high chairs or space to play. In case of cancellation less than 48 hours prior to the reservation, or in case one or more guests in a party do not appear, we have to charge 400 DKK pr guest. Also notice that there is a non-refundable fee of 10 DKK per person when placing a reservation.</image:caption>
